Baked Chicken:

4 boneless, skinless chicken breast

Cajun seasoning


Pineapple Salsa:

½ pineapple, diced and cored

1/4 cup chopped red bell pepper

1/4 cup diced red onion

1/4 cup chopped fresh cilantro




Baked Chicken:

  1. Generously season chicken breasts and brown each side in a saucepan with 2 tbsp of olive oil on medium/high heat.
  2. Transfer chicken breasts to baking pan, cover and bake for 20-25 minutes at 350F.
  3. Remove chicken from oven and allow to rest for 5 minutes before serving.


Pineapple Salsa:

  1. Mix all ingredients and refrigerate if not using immediately.
